Plant-Based Burgers Made Juicer, Tastier and Healthier

The Challenge

Creating a healthier and more appealing plant-based burger patty while reducing saturated fat content and maintaining taste and texture

The Solution

We were able to develop a plant-based burger patty with 32% less saturated fat compared to traditional formulations using coconut oil. The raw patties also offer a meatier mouthfeel and enhanced juiciness, as evidenced by texture analysis metrics like hardness, springiness and resilience.

The Impact

The reduced saturated fat content results in an improved Nutri-Score from C to B, making the patty a healthier choice for consumers. The enhanced texture of the patty also made processes more efficient, making it an attractive option for brands and manufacturers.
