Capuzzo-Frubella: Environmentally Friendly and Sustainable Dried Fruit Products

Capuzzo-Frubella is a European organization which specializes in the production of a wide range of dried fruit ingredients for various food applications. They are specialised in the industrial transformation of fruit and vegetable raw material and the quality of finished products is the result of careful selection of raw materials and investments in research and development.

Capuzzo-Frubella’s expertise and FSL’s experienced teams offer traditional, controlled and eco-sustainable dried fruit and powder products which allow manufacturers to incorporate more natural products into their product recipes.

Fruit Powders:
Fruit powders are particularly versatile products because they provide a concentrated form of fruit, which is easy to use, transport and store in a warehouse. They have extremely low moisture content of 2% providing an extended shelf life. In use, they can be rehydrated to recompose the original products, or used directly as they are in mixtures in diverse applications.

They are manufactured by processing fruit purees in cylindrical dryers. These enable production of the most highly valued 100% fruit powders, which means additive-free and with extremely low microbiological content.

Having 100% powders available means having safe, pure fruit ingredients without preservatives, starches, or flours. The powders are produced at the Capuzzo site and are obtained exclusively from the dehydration of purees in cylindrical dryers. Starches, rice flour, malt dextrin or flavors can be added but only on request from customers. These products are also widely used as natural colorants to replace synthetic artificial
products.

The drying process is extremely rapid, less than a minute, ensuring that very little of the active constituents of the product are lost. The result is a thin film that crumbles into fine fruit flakes of thicknesses that can to some extent be regulated. The flakes are often sold directly, for example for use in chocolate, or they can be subsequently ground up to produce genuine powders. Different granular dimensions can be created according to the grade of sieving requested by the customer.

 

Areas of application for fruit powders:

Dried Fruits:
Frubella and Capuzzo dried fruits are produced by drying fresh apples in continuous tunnels down to a final humidity of around 2% to 3%.

The drying systems use forced hot air circulation with controlled temperature and humidity to guarantee the quality of the drying process.

Conventional, controlled, and organic dried products are made from apples, yellow fruits, wild fruits, and vegetables. Osmotised and dehydrated fruit and vegetables such as red apple and wild fruit products, are picked and prepared in the Verona apple orchards located in a protected ecological area in Poland.

The climate in Poland where Frubella operates is ideal for growing the Idared variety of apples, characterized by very red skins, white pulp, and high acidity. The result is a dehydrated product with over 60% skin redness and retaining a very white pulp. This is achieved without the use of preservatives (SO2) for a healthier and more natural product.

Each product is offered in different sizes: from the smallest at 3mm, diced to 25mm, sliced in different weights and diameters, as well as segments and rings of various diameters. The latter in particular are achieved using an exclusive technology that includes puff drying. A large flaking plant completes the range of options.
