Recipe

  • 86.95% Skim Milk (1.5 % fat)
  • 9.00 % BEKAPLUS BP 800
  • 4.00 % Sugar
  • 0.05 % Vanilla Flavor

Final Product:

  • Protein: 10.7 %
  • Carbohydrates: 8.9 %
  • Fat: 1.7 %
  • Dry Matter: 20.5 %
  • pH-value: 6.7 – 6.9

Technology:

  • Mix all dry ingredients
  • Disperse all ingredients into milk
  • Holding time : Hydrate 1.5 – 2 hours
  • Measure pH – value and adjust to 6.7
  • Homogenize up – stream – 2 steps (50/150 bar at 60°C )
  • UHT-treatment at 142 °C / 2-3 sec
  • Cool down (< 20 °C) and fill aseptically
