Processing Technology
Sauce Bolognese
LIST OF INGREDIENTS:
30 % minced beef (SIII) 3 mm raw
70 % cold water
PER KG TOTAL MASS:
150 g VANTASIA® Schlemmer-Quick Bolognese oGAF
1.Place cold water in the cutter and add with VANTASIA® Schlemmer-Quick Bolognese oGAF. Mix it until VANTASIA® Schlemmer-Quick Bolognese oGAF is completely dissolved.
3.Fill the sauce directly into suitable containers e.g. plastic casing. Cook for 1 hour at 100 ° C in a combi steamer. Finally store it cool.
2.Add the minced beef and mix it to a homogenous mass. Afterwards let it rest (swell) for 10 to 15min.
4.If needed regenerate the sauce in warm water, combi steamer or microwave suitable dinnerware.

60 % chopped beef goulash, fresh
40 % cold water

1. Place cold water in the cutter and add with VANTASIA®Schlemmer-Quick Gulasch oGAF. Mix it until VANTASIA® Schlemmer Quick Gulasch oGAF is completely dissolved.
